Overview
The Golden Oyster (Pleurotus citrinopileatus) is a beautiful sub-tropical mushroom that prefers warm temperatures and high humidity. When young they are bright and vibrant, and although the yellow colour diminishes slightly with age it does remain through to maturity. Due to their delicate nature and very short shelf life they are not cultivated commercially.
When cooked they develop a delicious “nutty” flavor and are a winner as an appetizer (sauteed) or in stir-fries, omelets, pizzas and more – your imagination is the only limit!
