Overview
Pink Oysters (Pleurotus djamor) are a tropical mushroom that prefer warmer temperatures combined with high humidity. When young they are a bright pink colour, getting paler with age. Growing conditions will determine whether the mushrooms produced are thin and delicate or more substantial and meaty.
This is a very versatile mushroom and can be eaten in a variety of ways. Try them in stir-fries, stews, pastas, soups and risottos or just enjoy them sauteed. They have a delicious meaty, umami flavour with a chewy texture. It is also important to remember that oyster mushrooms are delicate and have a short shelf life so they should be cooked soon after harvesting.
